Beef and Onion Stew

Beef and Onion Stew做法
   材料:
   2 pounds lean round or stew beef, cut into 1-inch cubes

  For the stew, heat the oven to 325º. Sprinkle the beef cubes with salt and set them aside. In a large frying pan, cook the onions in the olive oil over low to moderate heat, stirring occasionally and turning up the heat a bit to slightly caramelize them. Transfer the onions to a heavy, medium-size ovenproof pot with a lid.

  In the frying pan, brown the salted beef (do not cook it through), in batches if you need to, over fairly high heat. Then transfer it to the pot with the onions.

  Lower the heat under the frying pan, then add the brown sugar and stir it around. Add the flour and cook for 5 minutes, stirring constantly. Slowly pour in the beer (it will foam up), stirring and scraping to loosen caramelized bits from the pan. Stir in the stock and bring it to a boil, then remove it from the heat (don't worry if it's lumpy).

  Taste the mixture and add more salt if desired. Add the bay leaves, thyme, and sage to the pot with the beef and onions and pour in the liquid from the frying pan. Bring the stew to a boil on the stovetop. Then transfer it to the oven, tightly covered, for about 3 hours.

  2.在大煲中放向片姜和撒少少胡椒面,放土豆块和红萝卜块,大约半煲到半小时左右,土豆的角开始见粉,就放芹菜、蘑菇、玉米、洋葱,烧几分钟后加盐,再烧一小会就可以吃了,因为芹菜、蘑菇、玉米、洋葱易熟和不宜煲得太长时间,太长时间会破坏维生素。喜欢辣的筒子们可加辣椒或辣椒干或粉等。

  3.我在煲里剩下的汤加上番茄,颜色更加鲜艳,看起来更有食欲,吃走来更醒胃

小诀窍

  BTW,那番茄是自己种的,味道特别鲜。汤做好后再撒几滴麻油,特别香。谢谢大家!

   牛肉 姜片 土豆和红萝卜 胡椒粉 洋葱和番茄 盐 芝麻油
  
   做法:
  

  一、先将牛肉放姜片焯水去沫,放多些水,好让沫浮得高些容易用勺撇开,又或者冲洗时用热水冲洗,不要骤冷骤热,

  二、同时在炷beef stew的锅或煲里烧开水,将去了沫的牛肉放入,再加土豆和红萝卜,加少少胡椒粉,先不要加盐,因为加了盐会便肉的蛋白蛋过早地凝固,肉就不太软了。再慢火煮一至两小时,肉软了;

  三、再加洋葱和番茄,滚几滚等洋葱番茄刚熟,就可加盐,加几滴芝麻油,好香,就OK了。

   材料:
   1 1/2 tablespoons oil

  1:TOSS the oil through the capsicums and onion. Chargrill over a high heat for 3-5 minutes, or until just tender. Cool.

  2:COMBINE the pasta with the capsicums, onion, bocconcini and parsley in a serving bowl. Drizzle with the dressing and toss through, then scatter over the Parmesan. Serve immediately.

  1) 用 parchment paper 把steamer垫好, 在纸上刷很少的色拉油。 如果家里没有老美用的steamer, 就找个金属的漏网, 竹蒸笼什么的代替吧。

  2) 先把干料混合好,然后加入湿料,混合好。

  3) 把混合好的料放 steamer 里,然后 steamer 放一锅开水上,盖上盖子,让其发酵3小时。

  4) 开大火烧水,水开后,把火转到中火,蒸上45分钟。用牙签插入,如果牙签出来没挂稀糊糊,就好了。

   材料:
   饼底:,全麦饼60克,黄油30克,馅料:,奶油奶酪250克,糖50克,西柚半个磨皮,西柚汁半杯,吉利丁片1片,淡奶油半杯,装饰:,鲜奶油1/4杯(打起),西柚一个
  
   做法:
  

  1.我买的饼干是太平芝麻全麦消化饼干,每块8g用了8块。

  2.将饼干装入保鲜袋,用擀面杖轻轻敲碎。

  3.然后再轻轻擀开,让饼干碎粒很小,很均匀。

  4.黄油放到小容器内,隔水融化至液体。

  5.将饼干碎倒入黄油中搅拌均匀。

  6.将搅拌好的黄油饼干碎倒入模具中,压平压实放在一边备用。

  7.准备西柚一个,洗干净外皮,西柚加个较贵,但买1-2个价格都可以接受。

  8.取半个西柚皮,磨皮备用。只要皮黄色的部分,不要白色的那部分。

  9.将室温软化的奶酪,糖,西柚皮一起放入盆中搅打顺滑。

  10.搅打好的样子。

  11.吉利丁片放入冰水中软化,然后放入西柚汁中隔热水至完全融化。

  12.将西柚汁缓缓倒入奶酪糊中搅拌顺滑。

  13.搅拌好的样子。

  14.将冷藏的淡奶油搅打至纹路清晰,提起时是图中的状态。

  15.将搅打好的奶油倒入奶酪糊中。

  16.要采用翻拌的方式拌匀奶酪糊,不要搅拌。

  17.拌好的奶酪糊倒入事先已经铺好饼底的模具中,刮平表面,震荡几下,放入冰箱冷冻3-5个小时后取出装饰。

  18.取出植物性鲜奶油解冻3小时以后,将植物性鲜奶油打至干性发泡。

  19.将花嘴,鲜奶油装入裱花袋,先练习一下裱花,顺手了就可以在蛋糕上裱花了。

  20.西柚剥皮,然后再轻轻地把西柚肉剥出,动作要小心,以免西柚肉断裂。

  21.剥好的西柚肉按照蛋糕的大小,需要进行适当整行,可以用剪刀剪出需要的形状的大小。

  22.蛋糕放入盘中,放到转台上,先将西柚肉码好,然后再裱花边,然后放绿叶装饰。

小诀窍

  1)配方中的西柚汁,可以用超市出售的罐装果汁代替。 2)配方中放入的奶酪糊的奶油是动物性奶油,裱花的是植物性奶油。 3)吉利丁片也可以用鱼胶粉代替,用量为10克溶解于西柚汁。 4)请注意两种奶油的打发状态。 5)裱花之前如果没有把握,先练习一会,觉得顺手了再实际操作。 6)拔西柚的时候要小心,必要的时候用剪刀辅助。 7)蛋糕成型时冷冻保存,成型较快,也可以冷藏一夜成型。 8)一次食用不完冷藏保存。
